🌿 June at The Chickpea Hub
June has been a wonderfully busy month here at The Chickpea Hub, with the allotment in full swing and summer flavours taking centre stage.
Our redcurrants have come in thick and fast — they’ve found their way into refreshing Bircher muesli bowls, while the gooseberries have been stewed into a tangy compote, perfect for dolloping onto Greek yoghurt or stirring into warm porridge. The freezer is steadily filling with berries for later in the year — a little stash of sunshine for colder months!
Beetroot has also been thriving, and we’ve loved experimenting with it in different ways: earthy roasted beetroot, vibrant beetroot hummus, and beetroot falafels have all featured on our plates. It’s also been the star of our much-loved Plant Power Bowl, part of our Sunday prep tradition — colourful, nourishing, and always satisfying.
This month also included a personal celebration — my birthday! True to tradition, it was a sunny day, and we were lucky enough to watch the Monarch’s Birthday Flypast from Duck & Waffle in London. Strikingly, this exact scene played out 13 years ago — a beautiful coincidence made even more special by the presence of my children.
We rounded off the day in true Chickpea Hub fashion: with a simple, comforting Italian bean stew and the ultimate summer dessert — fresh strawberries and cream.
Now we’re looking ahead to July and the joy of Wimbledon (and all the strawberry inspiration it brings!).
